What $ or € should i use to enter incoming payment

we normally enter forex payments received, which source can i use to get the rate ?

we normally enter the same rate all the time and there is always huge currency variance, which rate can we use to enter the incoming payments / remittances ?

when we buy foreign exchange that is not a problem we can use the rate at which we bought.

also if i do choose to enter rate at the time of entering the payment, which source should i use to get the rates.
